These enchiladas are not just warm and comforting, they are very easy to make. So if you are new to cooking, or are just looking for a new recipe, this is the one for you. Below is the step by step guide with photos, or you can jump straight to the recipe at the bottom. Enjoy everyone!

1.Preheat your oven to 350°F and grease a 9×13 pan.

2.In the bottom of the pan put a thin layer of the enchilada sauce and spread so it covers the entire bottom.

3.Dice one small white onion, One bell pepper (any color), and 2-3 garlic cloves or 1 Tbsp jarred garlic.

4.Add vegetables to a pan over medium heat and cook until onion is translucent and bell pepper is tender.

5.Remove vegetables from the pan and set aside.

6. In the same pan cook the ground beef until it is no longer pink and is broken up into smaller pieces.

7. Once the ground beef is fully cooked add 1/4 cup of the enchilada sauce, the cooked vegetables, 1/4 cup taco seasoning, and 1/2 cup water. Cook for 2-3 minutes.

8. To the filling mixture add half of the 1 1/2 cups of cheese and mix until fully melted.

9. Lay a tortilla out on a flat surface and put 1/2 cup of the fulling on one side of the tortilla. Roll up the tortilla and place in the bottom of the pan seam side down.

10. To the top of the tortillas add in the remaining enchilada sauce and shredded cheese.

11. Bake for 20-30 minutes or until cheese is fully melted and sauce is bubbling.

12. Serve with your favorite toppings and Enjoy!

Ingredients

  • 6 large flour tortillas

  • 1 pound ground beef or turkey

  • 1.5 cups shredded mexican blend cheese

  • 1-19 ounce can red enchilada sauce

  • 1/4 cup taco seasoning

  • 1/2 cup water

  • 2-3 cloves garlic or 1 Tbsp jarred garlic

  • 1 small white onion

  • 1 large bell pepper

Directions

  • Preheat oven to 350 °F and grease a 9×13 inch baking dish.
  • Mince onion, bell pepper and garlic.
  • Add onion, bell pepper and garlic to a pan on medium heat. Cook until bell pepper is tender and onion is translusent, about 3-5 minutes.
  • Remove vegetables from pan and set aside.
  • Add ground meat to the pan and cook, breaking up the meat into small pieces until fully browned and no pink is left.
  • Add 1/4 cup enchilada sauce taco seasoning, water, and vegetables to the pan with the cooked meat. Cook 2-3 more minutes.
  • Add in half of the cheese to the meat mixture. Stir and remove pan from heat.
  • Pour a thin layer of enchilada sauce to the bottom of the baking dish.
  • Lay a tortilla out on a flat surface and add 1/2 cup filling.
  • Roll tortilla and place seam side down in the baking dish. Repeat with remaining tortillas and filling.
  • Pour remaining enchilada sauce and cheese on top of the tortillas.
  • Bake uncovered for 20-30 minutes or until cheese is fully melted and enchilladas are heated through.
  • Remove from oven and let cool.
  • Add your favorite toppings (sour cream, guacamole, salsa, etc.) and serve.
  • Enjoy!
