The best Italian style meatballs

This recipe has quickly become a family favorite. Unfortunately my husband is allergic to dairy so instead of parmesan we use nutritional yeast. It tastes just as delicious, even without the cheese. My daughter once again asked for seconds on this meal, and my younger daughter once I said I would eat her meatballs decided to shove them in her mouth, haha. Give this one a try and I’m sure your whole family will love it. Happy cooking everyone!

  1. Preheat oven to 400°F
  2. In a small bowl mix together 1/2 cup seasoned breadcrumbs and 2/3 cup milk. This creates a paste that will help bind together the meatballs.
  3. In a large bowl add 1 pound ground beef, 1/4 onion (finely chopped), 2 cloves garlic (minced), 1 large egg (lightly beaten), 1 tsp salt, 1/2 tsp pepper, 1/4 cup parmesan cheese(or 1/8 cup nutritional yeast), 1 tsp dried parsley.
  4. Mix all ingredients using a gloved hand, or a spoon until all ingredients are fully combined.
  5. Use a small ice cream scooper to portion out each of the meatballs, roll them between your hands to make sure they are shaped correctly.
  6. Place each meatball on a large baking sheet and bake for 18-20 minutes, or until meatballs are fully cooked and browned.

7. Let meatballs cool an serve with your favorite pasta and sauce.

8. Enjoy!

Ingredients

  • 1/2 cup seasoned bread crumbs

  • 2/3 cup milk

  • 1 pound ground beef

  • 1/4 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 large egg, lightly beaten

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/4 cup parmesan cheese, or 1/8 cup nutritional yeast

  • 1 tsp parsley

Directions

  • Preheat oven to 400°F
  • In a small bowl mix together seasoned bread crumbs and milk. Set aside.
  • In a large bowl add ground beef, diced onion, minced garlic, egg, salt, pepper, parmesan cheese/nutritional yeast, and dried parsley
  • Once the breadcrumbs have absorbed most of the milk add it to the bowl with the rest of the ingredients.
  • Use your hands or a spoon to mix all ingredients together.
  • Once everything is mixed together use a small cookie scooper to portion out the meatballs and place them on a large baking sheet.
  • Bake for 20 minutes or until meatballs are fully cooked.
  • Serve with your favorite pasta and sauce (my recipe for pasta sauce is linked in the step by step guide above).
  • Enjoy!
