These egg bites are definitely a fan favorite in our house. They are perfect for those early school mornings where you don’t want to be cooking at 7am, at least I know I don’t want to be. Jump to Recipe- Preheat oven to 350°F and grease 2-12 count muffin tins. I’m using silicone to ensure they don’t stick.
- Add 4 Tbsps olive oil to a large pan over medium heat. Add in 336 grams of southern style hashbrowns and brown for 5 minutes, flip and brown for an additional 2-3 minutes.

3. Once hash browns are done divide them between each of the muffin cups.

4. Next add 5 pieces of bacon to a cold pan and heat over medium heat until desired crispiness.
5. Once bacon is done cooking add it to a paper towel lined plate and let it absorb the excess grease.
6. When the bacon is cool enough to handle crumble or cut the bacon into small pieces and divide between each muffin cup.

7. In a large bowl combine 10 large eggs, 1/2 cup milk, 3/4 cup shredded cheese, 1/4 tsp salt, and 1/4 tsp pepper.

8. Scoop the egg mixture into each muffin cup until it is 1/2-3/4 full.

9. Bake for 20 minutes or until eggs are fully set.

10. Let cool and serve.

10 large eggs
1/2 cup milk
3/4 cup shredded cheese
5 slices bacon
336 grams frozen southern style hash browns
4 Tbsps olive oil
1/4 tsp salt

Directions
- Preheat oven to 350°F and grease 2- 12 count muffin tins(or use silicone muffin tins)
- Heat olive oil in a large pan over medium heat, add hash browns.
- Heat hash browns for 5 minutes, flip and heat for 2-3 more minutes.
- Add hash browns to the bottom of each muffin cup.
- Take a cold pan and add bacon and heat over medium heat until bacon is desired crispiness.
- Once bacon is done cooking let grease drain on a paper towel lined plate until they are cool enough to handle.
- Crumble bacon or cut into small pieces and divide between each muffin cup.
- In a large bowl add eggs, milk, cheese, salt and pepper. Whisk together until everything is well combined.
- Scoop egg mixture into each cup until they are approximately 1/2-3/4’s full.
- Bake for 20 minutes or until eggs are fully set.
- Let cool, and serve.
