  1. In a medium bowl wisk together 6 eggs, 1/4 cup milk, salt and pepper (to taste) until well combined.
  2. In a medium pan over medium high heat add the egg mixture and cook stirring occasionally until eggs are fully cooked.

3. Once eggs are done cooking set them aside and heat a large pan over medium heat.

4. Add one tortilla to the pan top with 1/4 cup shredded cheese and 1/4 of the scrambled eggs. Top eggs with 1/4 cup cheese and second tortilla.

5. Let cook 1-2 minutes per side or until cheese is fully melted and tortilla is browned.

6. Remove from heat and cut into quarters. Repeat with the rest of the tortillas, cheese and eggs.

7. Serve and enjoy!

Ingredients

  • 6 large eggs

  • 1/4 cup milk

  • Salt and Pepper, to taste

  • 2 cups shredded cheese

  • 8 medium flour tortillas

Directions

  • In a medium bowl combine eggs, milk, salt and pepper. Mix until well combined.
  • In a large pan over medium low heat add your egg mixture stirring until eggs are fully cooked, set aside.
  • In a large pan over medium heat add 1 medium tortilla, 1/4 cup shredded cheese, and 1/4 of the scrambled eggs. Then top eggs with 1/4 cup shredded cheese and second tortilla.
  • Let cook for 1-2 minutes per side, or until cheese is fully melted and tortillas are browned.
  • Remove from pan cut into quarters. Repeat with the remaining tortillas, cheese, and eggs.
  • Serve and enjoy!
