Easy and Delicious One Pan Chicken and Mushroom Couscous

Couscous is seriously underrated, it takes on the flavor of whatever you cook it in. It is so versitile and works with any kinds of seasoning. This recipe has a pop of lemon flavor mixed with the broth that it’s cooked in, it is delicous. Not only that but it is so easy to make. All you need is one large pan, that’s it!   1. Heat a Tbsp of olive oil in a large pan over medium heat.
  2. To your pan add in 1/2 medium diced onion, 3 minced garlic cloves, 8 ounces sliced mushrooms.
  3. Cook for 2-3 minutes then season 1 pound of chicken breasts with salt and pepper to taste. Create a hole in the center of your pan and add your chicken breasts. Sear on each side for 1-2 minutes. They will finish cooking in the next step.

4. Remove chicken from pan and set aside.

5. Add in 2 cups of pearl couscous and cook for 1 minute.

6. Add in 3 cups of chicken broth and the juice from the whole lemon. Bring to a boil

7. Add in chicken on top and cover pan with a lid. Cook for 8-10 minutes or until couscous is tender and chicken is fully cooked (internal temp. 165°F).

8. Remove from heat and serve.

9. Enjoy!

Ingredients

  • 3 cups chicken broth

  • 2 cups pearl couscous

  • 1 pound chicken breasts

  • 8 ounces sliced mushrooms

  • Salt and pepper, to taste

  • 1/2 onion, diced

  • 3 garlic cloves, minced

  • Juice from 1 lemon

  • 1/2 Tbsp butter

Directions

  • add 1 Tbsp olive oil to a large pan over medium heat.
  • Add mushrooms, onion and garlic to pan, cook until vegetables are tender.
  • Creat a hole in the middle of the vegetables and sear the chicken on both sides for 1-2 minutes. (It will finish cooking when the couscous is boiling)
  • Remove the chicken and set aside.
  • Add in the couscous and cook for 1 minutes.
  • Add in your chicken broth, lemon, and butter, stir until everything is well combined.
  • Add the chicken back in to the pan and bring to a boil. Then lower the heat to low and cover your pan.
  • Let cook for 8-10 minutes or until couscous is tender and chicken is fully cooked. (Internal temp. 165°F)
  • Remove chicken and dice into bite sized pieces.
  • Add the chicken back in and stir.
  • Serve and enjoy!
