Homemade chicken noodle soup is a comforting classic, made with tender chicken, savory broth, fresh vegetables, and hearty noodles. It’s the perfect dish to warm both body and soul.

  • 10 cups chicken broth

  • 1.5 pounds cooked chicken, shredded or chuncked

  • 12 ounces frozen mixed vegetables

  • 1 small onion, diced

  • 2-3 cloves garlic, minced

  • 2 tsps Italian seasoning

  • 1 tsp salt

  • 1/2 tsp pepper

Directions

  • Heat a large stock pot over medium heat and add frozen vegetables, onion and garlic. Cook for 3-5 minutes or until vegetables are tender.
  • Once vegetables are cooked add in the cooked chicken, chicken broth and seasonings.
  • Bring to a boil, then reduce to low and simmer with the lid on for 30 minutes.
  • Add in your egg noodles and simmer for an additional 8-10 minutes, or until egg noodles are fully cooked.
  • Remove from heat and serve, enjoy!

Notes

  • I like to have a noodle forward soup if you would like it to be more broth forward adjust the amount of noodles accordingly.
