Jump to Recipe- Drizzle olive oil in a large stock pot over medium heat.
- Dice one small white onion and mince 3 garlic cloves.
- Add onion, garlic and a 12 ounce bag of frozen mixed vegetables to your pot. Cook for 3-5 minutes or until vegetables are tender.
- Add 1.5 pounds cooked chicken (shredded or chunked), and 10 cups chicken broth to the pot with the vegetables.

5. Bring pot to a boil then lower the temperature and simmer covered for 30 minutes. Stirring occasionally.
6. After the 30 minutes add in 5 cups of egg noodles (more or less depending on your preference. Let cook for an additional 8-10 minutes.

7. Remove from heat and serve, enjoy!

Ingredients
5 cups egg noodles *see notes*
10 cups chicken broth
1.5 pounds cooked chicken, shredded or chuncked
12 ounces frozen mixed vegetables
1 small onion, diced
2-3 cloves garlic, minced
2 tsps Italian seasoning
1 tsp salt
1/2 tsp pepper
Directions
- Heat a large stock pot over medium heat and add frozen vegetables, onion and garlic. Cook for 3-5 minutes or until vegetables are tender.
- Once vegetables are cooked add in the cooked chicken, chicken broth and seasonings.
- Bring to a boil, then reduce to low and simmer with the lid on for 30 minutes.
- Add in your egg noodles and simmer for an additional 8-10 minutes, or until egg noodles are fully cooked.
- Remove from heat and serve, enjoy!
Notes
- I like to have a noodle forward soup if you would like it to be more broth forward adjust the amount of noodles accordingly.
