Pork roast with carrots and potatoes

4 lb Pork roast
7 Carrots
1.5 Pounds potatoes
1 white onion diced
2 tsp Salt (divided)
1 tsp Pepper (divided)
2 cups Chicken broth or 2 cups water and 3 tsp bouillon
1 tsp Rosemary
1 tsp Oregano
1 tsp Thyme
2 Tbsp Olive oil
Directions
- Add 1 Tbsp olive oil to bottom of slow cooker and turn on the sear function (or heat oil in a pan on the stove over medium heat if yours doesn’t have this function).
- Season roast with 1 tsp salt and 1/2 tsp pepper. Sear all sides of the roast until they are browned.
- Remove roast and add 2 cups of chicken broth to the bottom of the slow cooker, scraping up any bits on the bottom.
- Dice potatoes, onion and carrots and add to a bowl.
- Add 1 Tbsp olive oil, 1 tsp salt, 1/2 tsp pepper, rosemary, oregano, and thyme to the bowl and mix so everything is evenly seasoned.
- Add vegetables to slow cooker on the sides and top of the pork roast.
- Put the lid on the slow cooker and cook on low heat for 7-8 hours or until roast is fully cooked and potatoes are soft.
- Remove from slow cooker and serve.
