  1. Preheat oven to 350°F and grease 2 shallow pie dishes or oven safe bowls.
  2. In a bowl mix together 6 eggs, 1/2 cup low fat cottage cheese, 2 tsps everything bagel seasoning (no salt), 1/2 tsp salt, 1/2 tsp pepper, 2 tomatoes (diced), 1 bell pepper (diced).

3. Add 1 xtreme wellness tortilla to the bottom of each dish, and pour your egg mixture evenly on each one.

4. Sprinkle 1/2 cup shredded cheese evenly over the two dishes.

5. Bake for 25-30 minutes or until eggs are fully set and cheese is fully melted.

6. Let cool for 5 minutes and serve.

7. Enjoy!

Ingredients

  • 6 large eggs

  • 1/2 cup low fat cottage cheese

  • 1 medium bell pepper, diced

  • 2 medium tomatoes, diced

  • 2 tsp everything but the bagel seasoning, no salt

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 xtreme wellness tortillas

  • 1/2 cup shredded cheese

Directions

  • Preheat oven to 350°F and grease 2 shallow pie dishes or shallow bowls.
  • Add one tortilla to the bottom of each dish.
  • In a medium bowl mix together eggs, cottage cheese and seasonings until well combined.
  • Divide egg mixture between the pie dishes and top with shredded cheese.
  • Bake for 20-25 minutes or until eggs are fully set.
  • Remove from oven and let cool for 5 minutes.
  • Serve and enjoy!
