- Cut 14-16 roma tomatoes into quarters and place on a large baking sheet.
- Cut the top and bottom off of 1 large onion (white or yellow) and cut in half. Seperate out the layers of the onion and place on your baking sheet.
- Season tomatoes and onion with 1 Tbsp salt, 1 tsp pepper, and 2 Tbsps olive oil. Mix until everything is fully coated.

5. Take 1 head of garlic and cut off the end. Place in a piece of tin foil and drizzle with olive oil. Wrap the garlic in the tin foil and place on the pan with the tomatoes and onion.
6. Bake for 30 minutes or until tomatoes, onion and garlic are fully softened.
7. Place tomatoes and onion in a blender or food processor. Unwrap garlic and squeeze out cloves into the blender.
8. If you would like a chunkier sauce pulse ingredients until desired consistancy is reached. For a smoother sauce blend until all chunks are gone.
9. Pour sauce and 2 Tbsps and 2 tsps granulated sugar (optional) Italian seasoning into a pot over medium low heat. Once sauce begins to simmer lower heat and let simmer for 30 minutes-1 hour stirring occasionally. This will help the flavors of the sauce meld togehter. Taste the sauce as you go so you know if you need to add anything. If the sauce is too acidic add more sugar.
10. Once sauce is done simmering serve over your favorite pasta.
11. Enjoy!
